It's deeeelicious.
I had my salad like I said I would, but as I sit in McDonald's using their free WIFI I was still hungry.
So oatmeal it was, after I asked the woman across from me if she's enjoying hers.
Only 260 calories. It's really as perfect as oatmeal can be. Apple chunks, raisins, creamy...
I'm already considering how I can remake at home.
But let's backtrack to my salad:
- Lettuce
- Black beans (I wanted Chickpeas, but greedy brother ate all...)
- Tomatoes
- Purple Onions
- Guacamole
- Corn
- Red Sweet peppers
- Tofu
For quite a while now, I've wanted to bring a big salad for lunch with me to school. I love the idea of salad because it's a great way to get raw vegetables, protein, and lots of textures and flavors in. But here's my dilemma: that it would get soggy and disgusting. Today I packed all the ingredients separate or packed with it's compliments (i.e. tomato with tofu since both hold lots of water.) I wouldn't want to do that everyday though. Help? I know of people who pack their salads in tupperware and I always wonder how they deal with the sog issue. Lemme know if you have any ideas.
To.the.gym.!! Tonight is suppose to be Hot Pilates, but since I have two gaping holes on the inner thighs of my leggings for some reason, I'm gonna do an hour on the elliptical instead. The leggings situation might just be the icing on the cake of my tackiness. I don't even...

I've seen their oatmeal on blog after blog. I have to try it!
it's the rave?! why, of course...mmmmmmmmmmm
OoOoOOo...I've been wanting to try Mcdonalds oatmeal. It look so yummy in the commercials and pictures!
As for salads I love it a little blue cheese, apples, and little baslamic dressing! Yummm.
Gosh, healthy options at Mickey D's, wow. I never go past fast food places, so am never tempted to stop in - aren't I lucky! ;) but that oatmeal (ahem, porridge!) looks yummy.
On the salad issue - I box up all my lettuce & bits together, then take the dressing separately in a little screwtop jar to dump on top when I'm ready to eat. No sog then.
Love salad, especially spinach, tomato, bacon & avocado with a drizzle of olive oil, lemon juice/balsamic vinegar, and a extra sprinkle of sea salt & grind of black pepper on the tomatoes right now. Nice combo of crispy green leafy goodness, really salty bacon, tart tomato and squishy avocado. Feta cheese instead of bacon is also just as good. Oh dear - now I'm counting down the hours to lunch...
hahahah, thank you for painting such a vivid picture for me, pinkvision! will try your suggestion and let you know. but i still worry that the tomato will sog the lettuce?
I saw that at mcd's and wished I could eat oatmeal. Just cant right now!
If I had gaping holes my inner thighs in my leggings, I could start a fire from the rubbing! Owies my thigh-flesh! ;-D
I'm not sure about how to keep your salad from getting soggy, but I have a great tip my mom gave me for that powerful red onion taste. After you cut it, soak it in vinegar for a while (my mom says ideally 30 minutes, but I do 5-10 minutes). It makes the taste a little sweeter and takes out some of that bite.
A-HA! Thanks, G :)))
